The effect of microwave drying is closely related to the electrical properties of the material being heated. P is proportional to the product of the dielectric constant ε' and the loss tangent t nδ of the medium. The ε' of each substance is different, but in addition to the high water content material and some "ferroelectric" substances, the ε' of the medium is between 1 and 10. The water ε' is particularly large, 78.54. Therefore, the higher the water content, the better the performance of the microwave. During conventional heating, the temperature surface is high and the interior is low. This temperature distribution is not conducive to rapid evaporation of water. The microwave heating is heated together inside and outside, and because the surface is easy to dissipate heat, the internal temperature is higher than the direction of the external temperature gradient and the direction of the water gradient is the same in the same heat transfer and mass transfer direction, prompting the internal water to evaporate rapidly, forming an internal pressure gradient. The moisture is quickly diffused to the surface to evaporate, which greatly shortens the drying time.
